Udo’s Delight and the 10 C-Rib-Rub

One great thing about Pattee Creek Market (PCM) in Missoula, MT is that it is a privately-owned neighborhood grocery store that makes a variety of products in-house. Salsa chips, salads and a large selection of pork and beef sausages. Over the years I must have tried over 60 different kinds of artisan brats from that store!

Udo’s Delight
In 2017, Dave D., PCM’s butcher, approached me about making an authentic German Bratwurst. He tried pretty much everything else and there are some really unique brats among them, but there was not a German Brat in the mix. I told him I would do some research, talk to family members back in Germany and find a traditional recipe. Dave experimented and refined and the result was a “German Super Brat”, with lots of pork, caraway spice, Swiss cheese and sauerkraut mixed in. The butcher named it “Udo’s Delight” and it has been one of the best selling brats at PCM since its launch. What makes it so unique? Let the butcher tell you!

Udo’s 10-C-Rib-Rub….
…….is made from a combination of 10 flavorful spices that are delicately blended.

Kansas and Memphis rubs are all-time classics, no doubt, but I wanted to try something new and unique. Of course, my first ingredient is:

1.) Caraway, but there are 9 other spices that start with a “C”.
2.) Coriander Seed,
3.) Coriander Powder,
4.) Cardamom Seed,
5.) Cumin Seed,
6.) Cumin Seed Powder,
7.) Cilantro Leaf,
8.) Curry,
9.) Cayenne Powder and
10.) Celery Salt

Sprinkle some edible lavender over the ribs, as a final touch. Culinary lavender is an incredibly versatile herb for cooking. It adds great aroma and an interesting color to any dish. The best edible lavenders are English lavender varieties (Lavandula angustifolia), not to be confused with regular lavender people put in their sock drawers!
